For as long as I can remember at the end of August my Dad would buy tons of corn on the cob and a whole chicken to make our family recipe of Chicken Corn Soup. It’s a Pennsylvania Dutch tradition that I’m happy to carry on.

Chicken Corn Soup

It would be a day of husking, cutting and tasting corn while the chicken made broth and we anticipated the yummy soup. My Mom would be on hand with tons of containers and bags to freeze the leftovers for winter and tell us to wait a day that it would taste better.

It’s a family recipe in all the ways it should be. Delicious, plentiful and traditional. I thought this year I would share it with you!

Supplies Needed:

20-24 ears of corn
Whole Chicken (I would  say 4-5 pounds is perfect)
Water
1 Box of Chicken broth
Celery
Onion
Parsley
Salt and Pepper
3 hard boiled eggs
Chicken Corn Soup steps

Step 1: Husk and cook your corn (I make my corn in the Cooler)
Step 2: Put your chicken in a huge pot and cover with water and 1 box of Chicken broth
Step 3: Add a Small to Medium size onion diced
Step 4: Add 3-4 stalks of celery dices
Step 5: Add a 1/2 cup of parsley chopped
Step 6: Let cook on the stove till the chicken is cooked all the way through
Step 7: Cut all the corn off the cob (Tip from How I Pinch a Penny use an Angel Food Pan)
Step 8: Once the chicken is done pull it out of the pot and let cool
Step 9: Pick the Chicken and get all the meat off adding it to the broth
Step 10: Add the corn
Step 11: Add the 3 hard boiled eggs (diced)
Step 12: Once everything is in the pot allow to cook for another 1/2 hour.
Optional: We never eat the soup on the 1st night we always let it cool and then put the whole pot in the fridge overnight. It just has a better taste.

Chicken Corn Soup Freezer meal

Now comes the fun of getting it ready for the winter. We like to enjoy it right away, but love it even more on a cold wintery day and lets be truthful you’ve just made a huge batch so you need to do something with it. We pack away about 5 meals in freezer bags to enjoy later.

Tip: When you go to reheat the soup here’s what you need to do:

Step 1: Pull out of freezer and thaw what you can. Add to a pot with 1 can of chicken broth
Step 2: Add some egg noodles or pasta noodles (we like cavatappi)
Step 3: Heat up and enjoy!

There you have it a Pennsylvania Dutch family tradition for me which I enjoy for dinner or soup and sandwiches or just when I want a little comfort food.
